Bacon Toast Recipe with Caramelized Onion

We share with you a simple and delicious bacon toast recipe with caramelized onion, with all the flavor of Galicia: the touch of Torre de Núñez cured bacon, the smoothness of smoked cheese, and the sweetness of slow caramelized onion that works magic in every bite. A quick starter, ideal for impressing at Christmas.

Ingredients for the bacon toast recipe with caramelized onion (2 toasts):
- 2 slices of rustic bread or farmhouse loaf (you can use gluten-free bread if you prefer)
- 250 g of Torre de Núñez sliced cured bacon
- 2 large onions
- 1 tablespoon of extra virgin olive oil
- 1 pinch of salt
- 1 teaspoon of brown sugar
- 1 tablespoon of dry wine
- 4 slices of smoked cheese or another cheese you like
- 1 tablespoon of honey

How to make bacon toast with caramelized onion and smoked cheese:
Prepare the caramelized onion.
Peel the onions and cut them into thin strips.
Heat a large skillet with the oil and add a pinch of salt.
Add the onion and let it cook over low heat, stirring occasionally, for 25-30 minutes, until tender, golden, and well reduced.
When it reaches that point, add the brown sugar and wine.
Cook for 2-3 more minutes, until the liquid evaporates completely and the onion has a shiny, syrupy appearance. Transfer to a plate and set aside.
Cook and caramelize the bacon.
Heat a skillet or griddle without oil. Arrange the Torre de Núñez bacon slices and sear over medium-high heat until golden and the edges begin to crisp.
If they release too much fat, carefully remove the excess.
Lower the heat and add the honey and apple cider vinegar.
Turn a couple of times so it absorbs the glaze well and cook for 30-40 seconds, until lacquered, shiny, and perfectly caramelized.
Toast the bread and prepare the cheese
Cut the bread into slices and toast on a griddle on both sides until golden and crispy.
While toasting, cut several slices of cheese and set aside until assembling the toasts.
Assemble the toasts.
Transfer the toasted bread to a tray and place the cheese on each slice. Add the hot bacon so it slightly melts the cheese and finish with a generous spoonful of caramelized onion.
Before serving, sprinkle with black pepper and a few salt flakes. Serve the toasts hot, with the onion still warm and the bacon shiny. They are perfect for a snack or a quick dinner with a gourmet touch.
