Hind leg from adult Duroc breed pigs. Duroc pork is characterized by excellent fat marbling, making it perfect for ham processing. It stands out for its low salt content (25% less) and sweet flavor.
Product made following the traditional Galician artisanal salting and curing process. The final result is a Serrano Ham with a uniform and consistent shape, featuring a round cut without the hoof, but with the skin.
- TEXTURE: Even, slightly fibrous, with no pastiness or softening. Optimal fat marbling thanks to its Duroc genetics.
