Cooking the lacón in a traditional pot

  1. Place the lacón in a large pot and cover it with plenty of cold water.
  2. Bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for 1 hour and 30 minutes.
  3. Afterward, remove the pot from the heat and let the lacón cool in its own broth until the next day. This step is key to maintaining its juiciness and making it easy to slice thinly.

Cooking the lacón in a pressure cooker

  1. Place the lacón in the pressure cooker and cover with water.
  2. Cook for 20 minutes once the valve rises.
  3. Turn off the heat and let it cool in the covered pot until the next day.

Roasting and preparing the peppers

  1. Preheat the oven to 200°C.
  2. Line a baking tray with parchment paper and place the peppers on it. Brush them with a little extra virgin olive oil and massage them to ensure they are well coated.
  3. Roast them on the middle rack for about 30 minutes, turning them with tongs halfway through.
  4. Remove them from the oven and place them in a pot or covered container. Let them cool and sweat for a couple of hours to make them easier to peel.
  5. After resting, peel and clean the peppers, removing the seeds and filaments. Reserve the juice they release to preserve them.
  6. Slice the peppers into strips and store them in a container covered with the juice released during roasting to keep them juicy and full of flavor.

Assembling and presenting the Galician-style lacón

  1. With the lacón cooked and cooled and the peppers roasted, we will now prepare the dish. Remove the lacón from the broth and, using a sharp knife, cut it into thin slices.
  2. Arrange the lacón slices on a large platter, making sure they do not overlap too much so they look attractive.
  3. Once the lacón is arranged on the platter, place the pepper strips in the center.
  4. Sprinkle the lacón with a little hot paprika (optional) and then with sweet paprika.
  5. Drizzle with a high-quality, intense olive oil and serve accompanied by good Galician bread.
