Hind leg from adult Duroc pigs. The meat from Duroc pigs is characterized by excellent fat marbling, making it perfect for ham production.
It stands out for its low salt content (25% less) and sweet flavor.
Product made following the traditional Galician artisanal salting and curing process. The final result is a Serrano Ham with a uniform and homogeneous consistency, with a round cut and no hoof, but with skin.
- TEXTURE: Even, slightly fibrous, with no pastiness or softening. Optimal fat marbling thanks to its Duroc genetics.
- COLOUR AND APPEARANCE WHEN SLICED: Characteristic colour from pink to purplish red in the lean part, and a glossy appearance of the fat. Even when sliced.
